| dc.description.abstract | การศึกษาเรื่อง บทบาทหน้าที่ของวัฒนธรรมอาหารพื้นถิ่นมอญในอำเภอบ้านโป่ง จังหวัดราชบุรี เป็นการวิจัยเชิงคุณภาพ มีวัตถุประสงค์เพื่อศึกษาบทบาทหน้าที่ของวัฒนธรรมอาหารพื้นถิ่นที่มีต่อชุมชนชาวมอญ อำเภอบ้านโป่ง จังหวัดราชบุรี กลุ่มผู้ให้ ข้อมูลหลักในการวิจัย ได้แก่ ผู้นำชุมชน ปราชญ์ชุมชน และผู้ประกอบอาหารพื้นถิ่นมอญ จำนวน 10 คน และมีการเก็บรวบรวมข้อมูลโดยใช้การสัมภาษณ์เชิงลึก การสังเกตในกลุ่มผู้ให้ข้อมูลหลัก ประชาชน และนักท่องเที่ยวที่มาร่วมงานประเพณีในพื้นที่วิจัย ผลการศึกษาพบว่า วัฒนธรรมอาหารพื้นถิ่นมอญในอำเภอบ้านโป่ง จังหวัดราชบุรีนั้นมีบทบาทความสำคัญต่อชุมชนในหลาย ๆ ด้าน เช่น บทบาทในการสืบทอดความเชื่อของชาวมอญที่แสดงออกผ่านการใช้อาหารในการประกอบพิธีกรรม การไหว้ผีบรรพบุรุษ และสิ่งศักดิ์สิทธิ์ประจำชุมชน บทบาทในการสร้างสำนึกร่วมของกลุ่มชาติพันธุ์ เช่น ข้าวแช่ซึ่งถือว่าเป็นสัญลักษณ์ของชาวมอญ วัฒนธรรมในการประกอบอาหาร บริโภคอาหาร การใช้อาหารในงานประเพณียังทำให้เกิดบทบาทการส่งเสริมปฏิสัมพันธ์ทางสังคม เป็นแกนยึดโยงคนในชุมชนให้เป็นน้ำหนึ่งใจเดียวกัน และยังมีบทบาทด้านการศึกษาเกิดการพัฒนากิจกรรม หลักสูตรการเรียนการสอนภูมิปัญญาอาหารพื้นถิ่น รวมถึงก่อให้เกิดรายได้จากการประกอบอาหาร การพัฒนาสินค้าผลิตภัณฑ์อาหารมอญสะท้อนให้เห็นถึงบทบาททางด้านเศรษฐกิจอีกด้วย | th_TH |

| dc.description.abstractalternative | “The Roles of Mon Cuisine Culture in Ban Pong District, Ratchaburi Province” is a qualitative research study, aiming at investigating the roles of vernacular food culture in the Mon community in Ban Pong District, Ratchaburi Province. The key informants of this research consist of 10 community members, including a community leader, local scholars and Mon vernacular cuisine entrepreneurs. The data were collected through in-depth interviews and by observing the people and tourists attending local festivals. The research results showed that vernacular cuisine culture plays important roles in the Mon community. For example, the inheritance of Mon belief is expressed through the use of cuisine as part of rites, ancestral worship, and as sacred objects. Vernacular cuisine such as Kao-Chae (rice soaked in iced water), which is the symbol of the Mon people, also plays the role of building collective conscience within the ethnic group. Moreover, catering culture, food consumption and cuisine for rites take the role of promoting social interactions, which unite community members, as well as the role of education, exemplified by activities and courses related to vernacular cuisine. In addition, food culture helps increase the income of the local community and encourages the development of Mon food products, which reflects its economic role. | th_TH |
