บทคัดย่อ: การวิจัยครั้งนี้เป็นการศึกษาถึงความเป็นไปได้ในการสกัดน้ำมันดิบจากเศษเหลือจากปลาทูน่า ศึกษาถึงองค์ประกอบทางเคมีของวัสดุเศษเหลือจากปลาทูน่า พบว่า ส่วนหัวปลา และอวัยวะภายในมีปริมาณไขมันร้อยละ 14.03 และ 5.11 ตามลำดับ ศึกษาผลของชนิดวัสดุเศษเหลือ ระยะเวลาในการเก็บรักษาโดยการแช่เย็นหรือแช่แข็ง และวิธีการสกัดต่อปริมาณผลได้ของน้ำมันปลา กรณีการแช่เย็น พบว่า ทั้ง 3 มีอิทธิพลร่วมกันต่อปริมาณผลได้ (p<0.05) โดยชนิดของวัสดุเศษเหลือที่เป็นหัวปลา ที่เก็บรักษาโดยการแช่เย็นที่ 0 วัน และสกัดด้วยการใช้ไอน้ำร้อนทำให้ได้ปริมาณผลได้ของน้ำมันสูงที่สุดคือ ร้อยละ 2.88 รองลงมาคือ ที่เก็บรักษาไว้ 5 วัน และ 10 วัน ได้ ปริมาณผล ได้ร้อยละ 2.57 และ 2.46 ตามลำดับ สำหรับกรณีการแช่แข็ง พบว่า ชนิดวัสดุเศษเหลือและวิธีการสกัดมีอิทธิพลร่วมกันต่อปริมาณผลได้ (p<0.05) การนำวัสดุเศษเหลือที่เก็บรักษาโดยการแช่แข็ง 1 5 และ 10 วัน โดยหัวปลาสกัดโดยใช้ไอน้ำร้อนทำให้ได้ปริมาณผลได้ของน้ำมันสูงที่สุดคือ ร้อยละ 2.88 และรองลงมาคือ การสกัดโดยให้ความร้อนโดยตรงได้ปริมาณผลได้เท่ากับร้อยละ 2.26 และการสกัดน้ำมันจากวัสดุเศษเหลือชนิดอวัยวะภายในช่องท้อง สกัดโดยให้ความร้อนโดยตรง ให้ปริมาณผลได้เท่ากับร้อยละ 0.37 ตามลำดับ จากนั้นนำกากมาสกัดในขั้นตอนที่สองโดยใช้ตัวทำละลาย พบว่าการสกัดแบบสองขั้นตอนทำให้ได้รับปริมาณร้อยละผลได้เพิ่มมากขึ้น (p<0.05) โดยสิ่งทดลองที่มีปริมาณผลได้สูงที่สุดคือ การสกัดแบบสองขั้นตอนจากหัวปลาที่เก็บรักษาโดยการแช่เย็น 0 วัน หรือ แช่แข็ง 1 วัน มีปริมาณผลได้ร้อยละ 7.95 เมื่อนำน้ำมันดิบที่สกัดได้มาเก็บรักษาที่อุณหภูมิห้องเป็นระยะเวลา 8 สัปดาห์ พบว่าเมื่อระยะเวลาการเก็บรักษานานขึ้น มีผลทำให้สี (a*) ค่า Acid Value ค่า Peroxide ค่าคุณภาพทั้งประสาทสัมผัสด้านกลิ่นหืน และสีน้ำตาล มีแนวโน้มเพิ่มขึ้น This research was studied the possibility of crude oil extraction from tuna by product. The chemical composition of tuna by-product was studied. It was found that the fat content of tuna head and viscera were 14.3 and 11.5 percent, respectively. The effect of type of tuna by-product, duration time of freezing or chilling storage and the extraction methods on the oil yield was investigated. For chilling, it was found that all those three factors affected on the oil yield (p<0.05). The tuna head refrigerated for 0 day and extracted by steam heating obtained the maximum oil yield at 2.88 percent. The second and third were refrigerated for 5 and 10 days obtained yield at 2.57 and 2.46 percent, respectively. For freezing, it was found that type of tuna by-product and the extraction methods affected on the oil yield (p<0.05). The tuna by- product freezed for 1 5 and 10 days then the tuna head extracted by steam heating obtained the maximum oil yield at 2.88 percent. The second and third were extracted by direct heating obtained yield at 0.37 percent, respectively. Thw two-step of oil extraction was developed, The first extraction step was conducted then the residue was extracted in the second step by using solvent extraction . It was found that the two-step extraction increased the oil yield (p<0.05). The highest oil yield was obtained from tuna head refrigerated for 0 day or freezed for 1 day obtained yield 7.95 percent. The extracted crude oil was kept at room temperature for 8 weeks. The result showed that the color values (a*) Acid Value, Peroxide value and sensory quality in terms of rancidity odor and brown color trend to increase.
